Brewers Notes

Third iteration of filtering system, extraction was maintained perfectly through all 16hrs. Better conversion as we slowly work back up to 1.05 extraction ratio, middle coil was set to shower longer than outer coil.

Origins

This fine example from the newly emerging specialty origin, Congo, comes from the SOPACDI Cooperative on the shores of Lake Kivu. This coffee is USDA Certified Organic and Fair Trade Alliance Certified.
